Strawberry Cloud Cake for the Cupcake Queen
My niece Sarah is making cupcakes. Not just any cupcakes but fabulous cupcakes from what I hear. And I haven’t even tasted any….yet. Just heard about them and seen pictures.
I told her I’d share this family favorite I got from my old friend Jane King when my daughter was a little girl and we lived in the DC area…she’s, well, never mind how old she is now!
Strawberry Cloud Cake
2 packages frozen strawberries
3/4 cup strawberry juice
4 eggs
1-3 oz package strawberry Jello
1 white cake mix
1/4 cup oil
Drain thawed strawberries. Measure juice and if necessary add water to make 3/4 cup. Combine cake mix, jello, eggs and beat in mixer for 2 minutes. Add oil and juice and beat for 2 more minutes. Fold in drained berries.
Bake in 2-9″ cake pans at 350 for 35 minutes.
When cool, frost with sweetened whipped cream: beat 1 pint of heavy whipping cream and 1/2 t vanilla until almost stiff… and then beat in 3T sifted confectioners sugar until mixture form stiff peaks.
Makes me want to make this cake just writing out the recipe. Mouthwatering!!
